Three Days simulating a commercial operation

Start 8:30, till 2:30 nonstop, no food, little drink: prepare appetizer, main, bread, & dessert for 5, 8 & 8 "customers". a mountain of food. 2 Ccoks frm each team stopped at noon, to set up the tables and play maire d' / waiter leaving the rest of us to finish up the dishes and plate them. Chef Christophe added to the realistic-ness by calling out the orders, and changing them ocassionally just to "make it interesting". Interesting all right. All a blur now.
